Restaurante Esencia (Carretera de Tías a Yaiza #60, Macher) — considered by many the leading restaurant in Lanzarote serving traditional Canarian cuisine with a twist, the stylish and modern surroundings of Esencia (once known as “La Tegala”) complement the reinterpretation of local dishes. Headed by chef David Pérez Ruiz, the food is impeccably presented and accompanied by an excellent wine list.
